Artichokes



Still catching up on uploading photos from the past week. I'm really enjoying getting to grips with ingredients I've never used before. I sometimes cook braised lamb shoulder with artichoke hearts and rosemary but I've never cooked whole globe artichokes in this way before. My friend Alex mentioned that he'd recently had some at our local Italian so when I saw these huge heads at the greengrocers, I thought I'd give it a go.

You need a fairly large quantity of olive oil to simmer the artichokes in so it doesn't work out as the cheapest dish to make. Flavour the oil with lemon juice, white wine, oregano, thyme and garlic and simmer for 50 minutes until the artichokes are meltingly tender. Remove the furry bit inside and then drizzle with lemony gremolata, sprinkle on some croutons and get messy with your fingers!
